In general, an app is how automations are created on Hubitat Elevation. For example, the Basic Rules app can be used to perform one or more actions (e.g., turning on a switch) in response to some event (e.g., lock code used).
Some apps, like the Hue Bridge Integration, provide a way to integrate other systems into your hub over your network. Others, like the Amazon Echo Skill or Google Home app, allow you to integrate Hubitat-connected devices with third-party systems. In general, however, apps can be thought of as a way to create automations.

Occasionally, an app is deprecated or "retired" and no longer available for installation on new hubs due to a newer app that has functionally replaced it. Documentation for these apps remains below. Existing users can continue to use these apps, or they can migrate to newer solutions (depending on the app, migration may be built-in or manual, but there is no need to change existing, functional setups).
